RECIPE: Amaranth-stuffed squash

Amaranth is a very attractive cereal and is also considered one of the most nutritious plant foods in the world. It provides a great protein content and is very versatile, so it can be consumed with various foods and in simple recipes. It helps fight anemia, cramps and diabetes.
- Cooking time: 50 minutes
- Serving Size: Half Zucchini
- Number of servings: 6
INGREDIENTS:
- ¼ amaranth
- 2 tablespoons oil
- 1 teaspoon garlic powder
- 1 onion
- 3 medium zucchini
- 250 grs of cherry tomatoes
- 1 pinch of salt
PREPARATION:
- Cook the amaranth in a pot over medium heat (2 fingers of water per amaranth).
- Add seasonings to taste and stir.
- When it boils, lower the heat and cook for 15-20 minutes.
- In a frying pan, sauté chopped onion and add cherry tomatoes until both items are golden. Stir and set aside.
- Wash the zucchini thoroughly and cut them into pieces about 10 centimetres high.
- Hollow them out and place them on a baking tray.
- Season with a dash of oil, salt, pepper, garlic powder and cumin and cook for 10 minutes.
- Remove them from the oven and fill them with amaranth.
- Cook again for another 10 minutes.
